Rockingham Family Recipes

Rockingham Fried Pecans have no artificial perservatives added. We use only the basic ingredients of sugar, salt, and canola oil. We use canola oil because of its lower fat content and it adds no perceptible flavor to the nuts and it also has a high heat tolerance. We package the fried pecans in resealable zip-locked, heat sealed bags which promote a long shelf-life. They can also be put in the freezer for longer storage times. They make a tasty addition to salads, ice cream, yogurt, or any other dessert. You can be creative in how you eat this delicious snack.

The following recipes are our family favorites using our fried pecans.

Crystal’s Cream Cheese Delight

  • 2 packages crescent rolls
  • 3/4 cup sugar
  • 2 (8oz) packages cream cheese
  • 1 egg (separated)
  • 1 cup fried pecans (chopped)

Place one package of rolls in the bottom of a 9 X 13-inch greased pan. Blend the cream cheese, sugar and egg yolk. Stir the fried pecans into the mixture and spread over the layer of rolls. Cover mixture with the other package of rolls. Glaze with the egg white and sprinkle a little sugar on top. Bake at 350 degrees for 30 minutes.(You can vary this recipe by placing crescent roll dough in a muffin pan and making individual cream cheese muffins.)

Cherry’s Brownie Supreme

  • 1 box of brownie mix
  • 1 cup fried pecans

Follow directions on package of brownie mix for preparation. Add one cup fried pecans to the mixture for a different and delicious taste. Bake brownies according to package directions.
